The latter variety is primarily associated with China where it has been used in the production of silk as silkworms fed on mulberry leaves. The black mulberry, which is the one usually grown for food, hails from the same area or more West, in the Caucasus or Anatolia. In ancient Greece, it was already eaten fresh or preserved, with Galen pointing out that it cannot be dried. There are a few scanty Greek references to a mulberry sauce with fish, but it does not appear as an ingredient in Apicius\u2019 recipe book.<\/p><div id=\"dev95-2832368321\" class=\"dev95- dev95-entity-placement\" role=\"region\" aria-label=\"\u0627\u0644\u0625\u0639\u0644\u0627\u0646\u0627\u062a\"><center>\r\n<script>\r\n  atOptions = {\r\n    'key' : '4ba6b6513c00e0ba76511f798ae56401',\r\n    'format' : 'iframe',\r\n    'height' : 50,\r\n    'width' : 320,\r\n    'params' : {}\r\n  };\r\n<\/script>\r\n<script src=\"https:\/\/www.highrevenueformat.com\/4ba6b6513c00e0ba76511f798ae56401\/invoke.js\"><\/script>\r\n\t<\/center><\/div>\n<p>In Arabic, the mulberry was known as <em>t\u016bth<\/em> (\u062a\u0648\u062b) or <em>t\u016bt <\/em>(\u062a\u0648\u062a), the latter still being the term in modern Arabic. The word goes back to Assyrian <em>tuttu<\/em> (mulberry tree) but entered Arabic via the Aramaic <em>t\u016bt\u0101<\/em>. In Classical Arabic, it was also called <em>fir\u1e63\u0101d<\/em> (\u0641\u0631\u0635\u0627\u062f), though this usually denoted the sweet mulberry. The blackberry (<em>Rubus fruticosus<\/em>) was known as <em>t\u016bth wa\u1e25sh\u012b<\/em> (\u062a\u0648\u062a \u0648\u062d\u0634\u064a; \u2018wild mulberry\u2019) or <em>\u02bfullayq<\/em> (\u0639\u0644\u0651\u064a\u0642). In the literature, the white mulberry was often referred to as \u2018sweet mulberry\u2019 (\u062a\u0648\u062a \u062d\u0644\u0648; <em>t\u016bt \u1e25ulw<\/em>), while the black variety was called \u2018sour\u2019 (\u062d\u0627\u0645\u0636; <em>\u1e25\u0101mi\u1e0d<\/em>) or \u2018Syrian (\u0634\u0627\u0645\u064a; <em>sh\u0101m\u012b<\/em>) mulberry.<\/p>\n<p>In cooking, both the sweet and sour mulberries were used, in stews and beverages, and even in a <em><a href=\"https:\/\/eatlikeasultan.com\/banana-judhaba-%D8%AC%D9%88%D8%B0%D8%A7%D8%A8%D8%A9\/\">judhaba<\/a> <\/em>(\u062c\u0648\u0630\u0627\u0628\u0629) \u2014 where black mulberry juice was mixed with sugar. Dried unripe sour mulberries were used instead of sumac as a souring agent. Mulberries are only found in Middle Eastern recipe collections from Egypt, Iraq and Syria (whose mulberries were particularly prized), and appear not to have been used in Andalusi cuisine.<\/p>\n<p>In the medical literature, sweet mulberries were thought to provide little nourishment to the body, be harmful to the stomach in that it corrupts its contents, as well as having laxative properties.
