Before leaving for Spain, I imagined I’d return home dreaming about paella, elaborate tapas spreads, and fresh seafood along the coast. Salmorejo is a chilled tomato soup from Córdoba, made with ripe tomatoes, day-old bread, garlic, olive oil, and salt. Unlike gazpacho, which is lighter and more vegetable-forward, salmorejo is thick, velvety, and intensely rich despite containing no cream. It is traditionally topped with chopped hard-boiled egg, diced jamón serrano, and an extra drizzle of olive oil. Alongside it sat a generous slice of Tortilla Española—a Spanish potato omelet made from slowly cooked potatoes, eggs, olive oil, and, depending on who you ask, onions.

As I looked around the restaurant, I noticed something curious. Nearly every table was serving these two dishes together, and diners were dipping pieces of the tortilla directly into the chilled soup. Naturally, I followed their lead. The creamy potatoes soaked up the bright tomato flavor while the fruity olive oil tied everything together. It was one of those rare meals where every bite made perfect sense, and I immediately understood why this pairing has remained a favorite throughout southern Spain.

As beautiful as the food was, what fascinated me even more was the region where I was eating it. Traveling through Córdoba, Granada, and Seville, I couldn’t help but notice how familiar many things felt. The horseshoe arches, intricate geometric tilework, peaceful courtyards, fountains, and fragrant orange trees all reflected a history that extends far beyond modern Spain. For nearly eight centuries, much of southern Spain was part of al-Andalus, where Muslim rule left an extraordinary legacy that still shapes the region’s architecture, agriculture, language, and cuisine.

When people think about the Arab influence on Spain, they often picture magnificent landmarks like the Alhambra or the Great Mosque of Córdoba. Yet some of the most enduring contributions were made in the fields and kitchens. Muslim farmers introduced sophisticated irrigation systems that transformed the dry Andalusian landscape into productive farmland. They expanded the cultivation of olives and citrus fruits while introducing crops such as rice, eggplant, spinach, sugarcane, saffron, almonds, and countless herbs that would become staples of Spanish cooking. Their influence helped establish the agricultural foundation that still defines much of southern Spain today.

Interestingly, the tomatoes that give salmorejo its vibrant color weren’t part of that early culinary tradition. Tomatoes arrived in Europe from the Americas in the 16th century, centuries after the height of al-Andalus. Yet the dish itself still reflects many of the values that shaped Andalusian cuisine: exceptional olive oil, simple ingredients, rustic bread, garlic, and a deep respect for letting high-quality produce shine. It is a beautiful example of how food continues to evolve while carrying traces of the cultures that came before.

Olive oil, in particular, tells this story remarkably well. Driving through Andalusia, I was amazed by the endless hills covered with olive trees stretching as far as the eye could see. Today, Spain is the world’s largest producer of olive oil, and Andalusia is responsible for much of that production. Every spoonful of salmorejo celebrates this remarkable landscape. The olive oil isn’t simply an ingredient—it creates the soup’s luxurious texture and provides much of its rich, fruity flavor.

I was also reminded of how many Mediterranean cultures share the same philosophy when it comes to food. Using stale bread to thicken a soup may seem unusual today, but throughout history bread was far too valuable to waste. Across the Middle East and the Mediterranean, leftover bread found new life in dishes like fattoush, fatta, panzanella, and now, for me, salmorejo. Different cultures developed different recipes, but they shared the same practical wisdom: transform simple ingredients into something nourishing and delicious.

The same simplicity defines Tortilla Española. With just potatoes, eggs, olive oil, and perhaps onions, it demonstrates how patience often matters more than complexity. The potatoes are gently cooked in olive oil until tender and buttery rather than crisp, creating a texture that is comforting and satisfying. It’s the kind of recipe that reminds us extraordinary food doesn’t require expensive ingredients—just a little care and time.

One of my favorite discoveries from this trip was realizing how interconnected Mediterranean cuisines truly are. Every country has developed its own traditions and flavors, yet they also share common threads that have traveled across borders for centuries. Olive oil, garlic, fresh herbs, bread, seasonal vegetables, and the importance of gathering around the table create a culinary language understood throughout the region. Those shared traditions are part of what makes exploring Mediterranean food so endlessly fascinating.

Recreating this meal at home transported me back to those sunny streets of Andalusia. While I can’t recreate the sound of church bells echoing through ancient plazas or the scent of orange blossoms drifting through narrow alleyways, one spoonful of salmorejo and one bite of tortilla instantly brought those memories flooding back. It reminded me that some of the most unforgettable travel experiences aren’t necessarily the grand monuments or famous attractions. Sometimes they’re found in the simplest meals, prepared with care, shared with others, and rooted in centuries of history.

For me, this lunch wasn’t just one of the best things I ate in Spain. It was a reminder that food has the power to connect cultures, preserve history, and transport us back to places we’ve fallen in love with. That’s the kind of recipe worth bringing home.

Check out my video below to see that experience, as well as the technique to making this simple, yet magnificent lunch:

Salmorejo Cordobés (Traditional Chilled Tomato Soup)

Ingredients

1 pound very ripe tomatoes (Roma, pear, or vine-ripened)

3 ounces 5–7 oz day-old crusty white bread, torn into pieces

1-3 small garlic cloves (depending on how much you like garlic)

1/4 cup extra virgin olive oil (use a really good quality olive oil)

1 teaspoon sherry vinegar (optional but traditional in many homes)

1 teaspoon salt, or to taste

Traditional Toppings

2 hard-boiled eggs, finely chopped

2 oz (60 g) jamón serrano, finely chopped (or omit for a vegetarian version, or use ham or turkey bacon as well)

Instructions

Core and roughly chop the tomatoes.
