It is considered <b>an intimate occasion<\/b> reserved for family members and close family friends, so if you are a guest from outside the family, it\u2019s a big deal. Presents are opened either after dinner on Christmas Eve, or in the morning on Christmas Day.<\/p>\n<p>The French <b>New Year\u2019s Eve<\/b> (<i>le r\u00e9veillon du Nouvel An<\/i>) is often celebrated with friends rather than with family, and it is more of a grown-up occasion. If there are small children, they will be tucked into bed early or allowed to collapse on some couch, but the party is not about them. (Sorry kids.)<\/p>\n<p>Some people go out to dinner on New Year\u2019s Eve, but I don\u2019t know who they are and I wouldn\u2019t want to go with them. In my circle, we are more likely to have <b>a special dinner<\/b> at someone\u2019s house, and possibly go out later, or just push the furniture and party at home*.<\/p>\n<p><span id=\"more-13225\"><\/span><\/p>\n<h2>Ap\u00e9ritif<\/h2>\n<p>A French holiday meal is designed to go on long into the night, so the ap\u00e9ritif phase \u2014 <b>pre-dinner drinks with nibbles<\/b> \u2014 will last awhile. Champagne is the typical drink served, but because I am contrarian, I prefer to pick out an alternate sparkling white. At the <i>caviste<\/i>\u2018s you can ask for a <i>vin blanc en m\u00e9thode champenoise<\/i>, a white wine produced in the style of Champagne, but from another region.<\/p>\n<h3><a href=\"https:\/\/cnz.to\/recipes\/appetizers\/raw-scallop-crostini-pumpernickel-and-herbed-butter-recipe\/\">Raw Scallop Crostini on Pumpernickel Bread<\/a><\/h3>\n<p>Shellfish is a staple of the French holiday table, and <i>coquilles Saint-Jacques<\/i> (sea scallops) are especially prized. Please, take a seat!<\/p>\n<h3>Oysters<\/h3>\n<p>A traditional no-cook treat to open the holiday feast is the platter of oysters, freshly delivered from the Atlantic ocean. Order yours from the busy <i>poissonnier<\/i> well in advance; they will shuck them for you at no additional cost (but usually there\u2019s a tip jar). It was a luxury item, produced traditionally, with care and respect for the animals, and appreciated with reverence. Nowadays, people want it year-round and they want it cheap. This has spawned an industry of mistreated, factory-farmed animals yielding tasteless, fatty foie gras.<\/p>\n<p>My recommendation is to skip the foie gras altogether if you can\u2019t be sure it has been produced <b>artisanally and ethically<\/b>. If, however, you get to visit an independent producer on your travels, or have a solid recommendation for one from a chef or discerning cook, buy a <i>terrine de foie gras entier mi-cuit<\/i> in a jar and savor every bite.<\/p>\n<p><b>Duck or goose<\/b> is a matter of preference; the former is more common (ducks are easier to raise) and the flavor more assertive.<\/p>\n<p>Serve your terrine de foie gras cold, but not too cold, with toasted bread. <i>Pain brioch\u00e9<\/i> (think enriched yeast bread such as challah) is traditional, I prefer <b>a sourdough loaf<\/b> to complement the sweetness of good foie gras. Some people insist on serving it with <i>pain d\u2019\u00e9pices<\/i> (honey spice cake) but that is too cloying for my taste, and I don\u2019t think the pairing benefits either. The proper way to eat foie gras is to slice a bite-size piece with your knife, place it on the bread <i>without spreading<\/i> (sweet heavens, no), and take a bite.<\/p>\n<h3>Smoked Salmon<\/h3>\n<p>Sigh. Another luxury food item that has been <b>utterly ruined<\/b> by the consumer\u2019s insistence to eat it any old day of the year, but no willingness to pay the proper price for it. The consequence? Factory-farmed salmon pumped full of drugs and chemicals, destroying the environment, and resulting in oily, unsubtle smoked salmon that just tastes of fish and smoke.<\/p>\n<p>I would much rather buy wild salmon and <b>indulge just once a year<\/b>, buying a couple of thin slices per person and savoring every bite with my eyes closed. (I get mine from <a href=\"http:\/\/www.terroirs-avenir.fr\/produits\/poulette-et-poularde-de-la-cour-darmoise\/\">Terroirs d\u2019Avenir<\/a>.)<\/p>\n<p><b>Game<\/b> is also a popular choice, and it certainly leaves an impression. I remember my uncle roasting a thigh of boar one year, and a friend\u2019s father a whole side of venison, on a spit, for hours, in an open chimney.<\/p>\n<p>But, um, for smaller gatherings, here are my favorite French chicken recipes, which can be applied to any kind of small bird:<\/p>\n<h3><a href=\"https:\/\/cnz.to\/recipes\/meat-charcuterie\/muriels-chicken-recipe\/\">Muriel\u2019s Chicken<\/a><\/h3>\n<p>I love this recipe for its simple, foolproof method. What was it like, and what were some of the most memorable French holiday dishes you tried?<\/p>\n<p>* Full disclosure: I\u2019m not a big party person, and I hate having to find a cab ride home \u2014 or a V\u00e9lib\u2019 \u2014 in the middle of the icy night on New Year\u2019s Eve.
