week to prep or cook a bunch of ingredients in advance, which you can draw from and combine for <b>low-effort homemade meals<\/b> the rest of the week.<\/p>\n<p><span id=\"more-15348\"><\/span><\/p>\n<p>It is the shortest path to feeling like a <b>kitchen superhero<\/b>, saving you brain juice and money along the way.<\/p>\n<p>And today, I am offering you the <b>vegetarian batch cooking plan for winter<\/b> I\u2019ve created and test-driven with great success: 1 1\/2 hours of prep work for easy 6 meals on subsequent days.<\/p>\n<ul>\n<li>Meal #1: <b><a href=\"https:\/\/cnz.to\/recipes\/vegetables-grains\/spiced-pilau-rice-beets-recipe\/\">Spiced Pilau Rice with Beets<\/a><\/b> \u2014 a comforting, beautiful-looking dish with warm spices.<\/li>\n<li>Meal #2: <b><a href=\"https:\/\/cnz.to\/recipes\/pasta\/stuffed-lumaconi-butternut-chestnuts-recipe\/\">Stuffed Lumaconi with Butternut Squash<\/a><\/b> \u2014 to start the week with a golden and appetizing dish that ticks all the boxes \u2014 pasta, silky sauce and melty cheese with an irrestistible toasted top layer.<\/li>\n<li>Meal #3: <b><a href=\"https:\/\/cnz.to\/recipes\/vegetables-grains\/winter-vegetable-curry-recipe\/\">Winter Vegetable Curry<\/a><\/b> \u2014 because a warming bowl of curry made with seasonal vegetables is always a Place half in a container and refrigerate.<br \/>\n\u2610 On a rimmed baking sheet, arrange the remaining butternut in a single layer. Drizzle with olive oil and sprinkle with 1 teaspoon salt. Mix with your hands to coat well.<br \/>\n\u2610 Insert in the oven and roast for 30 minutes, until tender.<\/p>\n<p>In the meantime :<\/p>\n<p>\u2610 Chop the <strong>chestnuts<\/strong> roughly, if using, and set them aside in a bowl.<br \/>\n\u2610 Wash and dry the <strong>herbs<\/strong>.<br \/>\n\u2610 Chop 1\/4 of the herbs and add to the bowl of chestnuts. Put the remaining herbs on a dry kitchen towel.<br \/>\n\u2610 Grate the zest of the <strong>lemon<\/strong> finely into the bowl and mix thoroughly.<\/p>\n<p>While the butternut is still roasting, wash and prep the rest of the produce:<\/p>\n<p>\u2610 Peel 1\/3 of the <strong>beets<\/strong> and cut into 1-cm (1\/3-inch) cubes. Place in a container, label as \u201cbeets for pilau\u201d and refrigerate. (Leave the rest of the beets unpeeled and whole.)<br \/>\n\u2610 Peel half of the <strong>carrots<\/strong>. Cut into 1.5-cm (1\/2-inch) slices. (Leave the remaining carrots unpeeled and whole.)<br \/>\n\u2610 Trim the <strong>cauliflower<\/strong> into florets.<br \/>\n\u2610 Brush the <strong>potatoes<\/strong> and <strong>turnips<\/strong>.<br \/>\n\u2610 Peel the turnips if thick-skinned. Cut into 1.5-cm (1\/2-inch) cubes.<br \/>\n\u2610 In a large container, gather the sliced carrots, cauliflower florets, cubed turnips, and whole potatoes. Cover, label as \u201cvegetables for curry,\u201d and refrigerate.<\/p>\n<p>\u2610 Wash and dry the <strong>scallions<\/strong>.<br \/>\n\u2610 Wash and dry the <strong>lettuce<\/strong>. Add the lettuce leaves to the herbs in the kitchen towel, roll up, and refrigerate.<\/p>\n<p>\u2610 When the <strong>butternut<\/strong> is done roasting, process in a blender or mash with a potato ricer until smooth, and transfer to a medium container.<br \/>\n\u2610 To the butternut container, add the bowlful of chestnuts, chopped herbs, lemon zest, and 1\/2 teaspoon salt.<br \/>\n\u2610 Stir to combine. Cover and refrigerate.<\/p>\n<p>\u2610 Chop the <strong>cashews<\/strong> roughly. Place in a jar with a lid at room temperature.<\/p>\n<p>\u2610 Peel and slice the <strong>onions<\/strong> finely. Refrigerate in a container.<br \/>\n\u2610 Peel and mince the <strong>garlic<\/strong> finely. Refrigerate in a container.<br \/>\n\u2610 Peel the <strong>ginger<\/strong> and chop finely. Refrigerate in a container.<\/p>\n<p>\u2610 In a medium bowl, stir together the <strong>kimchi<\/strong>, 1 tablespoon honey, 1 tablespoon rice vinegar (or other vinegar), 1 tablespoon soy sauce, and 1 tablespoon sesame oil (or other oil). Keep in a covered container labeled \u201ckimchi dressing for Brussels sprouts\u201d in the fridge.<\/p>\n<p>Finally, measure out the <strong>spices<\/strong>:<\/p>\n<p>\u2610 In a small container, measure 1\/4 teaspoon fennel seeds, 1\/4 teaspoon coriander seeds, 1\/4 teaspoon mustard seeds, and the seeds from 4 cardamom pods. Label as \u201cpilau spices.\u201d<br \/>\n\u2610 In a second small container, measure 1 teaspoon ground cumin (or whole seeds), 1 teaspoon ground coriander (or whole seeds), 1 teaspoon ground turmeric, and 1 teaspoon fennel seeds. Label as \u201csoup spices.\u201d<\/p>\n<h3>Meal #1: <a href=\"https:\/\/cnz.to\/recipes\/vegetables-grains\/spiced-pilau-rice-beets-recipe\/\">Spiced Beet Pilau<\/a><\/h3>\n<p><i>Active time: 10 minutes<br \/>\nTime-to-table: 25 minutes<\/i><\/p>\n<p>\u2610 Heat 2 tablespoons coconut oil (or other cooking oil) over medium heat in a large skillet.<br \/>\n\u2610 Add in the pilau spices and heat for a few seconds, until they start to pop. (Skip if using curry powder instead.)<br \/>\n\u2610 Add 280 grams (1 cup) rice, 1\/2 teaspoon salt, 1\/4 teaspoon ground cinnamon (and 2 teaspoons curry powder if that\u2019s what you\u2019re using).<br \/>\n\u2610 Stir to combine, and cook for 3 to 4 minutes, stirring regularly, until the rice becomes translucent.<br \/>\n\u2610 Add the cubed beets and stir to combine.<br \/>\n\u2610 Pour in 360 ml (1 1\/2 cups) stock and bring to a simmer. Adjust the heat so it will remain at just a low simmer, cover, and cook without stirring until all the stock is absorbed; this will take 10 to 15 minutes depending on your rice.<br \/>\n\u2610 While this is cooking, chop 1\/3 of the remaining herbs (parsley and cilantro) roughly. Combine with the chopped cashews.<br \/>\n\u2610 Taste the rice for doneness; if it isn\u2019t cooked through, add a few tablespoons water and cook for a few more minutes. Adjust the seasoning.<br \/>\n\u2610 Serve with a scatter of chopped cashews and herbs.<\/p>\n<p><i>Note: If you have leftovers, you can serve them with the Winter Vegetable Curry for Meal #3.<\/i><\/p>\n<p><img data-recalc-dims=\"1\" decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-10040\" src=\"https:\/\/i0.wp.com\/cnz.to\/wp-content\/uploads\/2016\/02\/beet_pilau-3.jpg?resize=760%2C507&#038;ssl=1\" alt=\"Easy Spiced Beet Pilau\" width=\"760\" height=\"507\" style=\"width:100%\" srcset=\"https:\/\/cnz.to\/wp-content\/uploads\/2016\/02\/beet_pilau-3.jpg 760w, https:\/\/cnz.to\/wp-content\/uploads\/2016\/02\/beet_pilau-3-450x300.jpg 450w, https:\/\/cnz.to\/wp-content\/uploads\/2016\/02\/beet_pilau-3-300x200.jpg 300w, https:\/\/cnz.to\/wp-content\/uploads\/2016\/02\/beet_pilau-3-355x237.jpg 355w, https:\/\/cnz.to\/wp-content\/uploads\/2016\/02\/beet_pilau-3-600x400.jpg 600w\" sizes=\"auto, (max-width: 760px) 100vw, 760px\"><\/p>\n<h3>Meal #2: <a href=\"https:\/\/cnz.to\/recipes\/pasta\/stuffed-lumaconi-butternut-chestnuts-recipe\/\">Stuffed Lumaconi with Butternut Squash<\/a> + Greens<\/h3>\n<p><i>Active time: 15 minutes<br \/>\nTime-to-table: 45 minutes<\/i><\/p>\n<p>\u2610 In a large saucepan, bring water to the boil with some coarse salt and a drizzle of olive oil. Add the lumaconi and boil until just shy of al dente, about 10 minutes or according to package instructions.<br \/>\n\u2610 While the pasta is cooking, grate the cheese finely.<br \/>\n\u2610 Drain the pasta, return to the saucepan, drizzle with olive oil, and shake to coat so they won\u2019t stick to one another as you work.<br \/>\n\u2610 Preheat the oven to 220\u00b0C and grease a round 25-cm (10-inch) baking dish or cast-iron pan with olive oil.<br \/>\n\u2610 Spoon about 1 tablespoon of the butternut filling into each lumaconi, and arrange in the prepared dish, snugly but in a single layer.
